Solevo Kitchen is owned and operated by fourth generation Italian-American restaurateurs and brothers Ronald and Joseph Solevo. Hailing from Southern Connecticut, the Solevo boys were raised in the restaurant business- learning at the apron strings of their parents and grandparents. After years of refining his skills and experience in Manhattan, Brooklyn and abroad, Chef Ronnie is thrilled to have put roots down in his family’s favorite place: Saratoga Springs. For decades, the Solevo family visited Saratoga and dreamt of bringing their cuisine to this vibrant city. Solevo is the realization of that dream and an homage to the recipes passed down through the family’s generations of Southern Italian Chefs and restaurant owners.
Solevo Kitchen practices scratch cooking, using the abundance of local and organic ingredients available in upstate New York. The menu changes frequently and is a collection of peasant-style family recipes, authentic regional Italian cuisine, and Chef Ronnie’s contemporary takes on Italian-American red sauce classics. Joseph’s specially curated list of cocktails draws inspiration from classic Italian mixology and the ever evolving and extensive wine list centers on food-friendly pairings.
