Whole milk mozzarella is coated in cheesy and garlicky pecorino romano breading, fried until crisp and set atop our San Marzano marinara. Like all things at Solevo, this fried mozz is made entirely from scratch (including the mozz) in an effort to give you the best possible version of the most satisfying foods!

The more you know: Despite popular belief, Eggplant Parm did not originate in the north-central city of Parma and is not named after Parmigiana cheese. The name instead comes from the Sicilian word “Parmiciana” meaning shutters, as the eggplant resembles the little wood strips on shutters when assembled. Hard to see under all that cheese, though.

A classic has the power to transport you to a time when things seemed normal; a reminder to take nothing for granted. A seat at the bar, a smiling face. Frank and Ella crooning over the hum of a crowded dining room. Affectionately close conversations amidst dim lighting, save the fiery flash from the kitchen while your Francese is being sautéed. We used to hear complaints that our restaurant was too loud, too crowded. We miss those complaints. Today, you can still enjoy Francese at the bar, and we’re still playing Sinatra... but we deeply miss the vibrant, buzzing sea of you all that made Solevo way too loud and way too crowded and way too much fun. As descendants of Southern Italian immigrants, we feel privileged to keep many of the food traditions of our ancestors alive and also pay homage to how those recipes have evolved through the generations. We call our beans and greens “Pane Cotte” (not to be confused with Panna Cotta, the dessert). Pane Cotte, translated to “cooked bread” is through and through a New Haven Italian immigrant dish (our CT followers can attest)! Grown out of the need to feed a crowd on a budget and limit food waste, the beans and greens get a last minute addition of day-old bread to soak up the garlicky, oily goodness. Solevo Kitchen’s contemporary evolution includes shaved grano padano and house made toasted focaccia in place of the day-old bread. We are proud that Solevo Kitchen + Social is a reflection of the hard work and tasty ingenuity of our parents, grandparents and great-grandparents... The Solevo’s!
